1 kg de harina
150 g de azúcar (1)
150 g de azúcar (2)
18 g de sal
22 g de levadura instantánea
250 ml de huevo
150 g de mantequilla (1)
250 ml de leche
150 g de mantequilla (2)
10 ml de agua de azar
RELLENO
500 g de mermelada de calabaza horneable
10 ml de agua de azar
DECORACIÓN
100 g de azúcar
50 g de mantequilla derretida
1 - AMASAR con aditamento gancho, harina, azúcar (1), sal, levadura diluida en el agua azar
2 - AÑADIR el huevo, la leche y la mantequilla (1) temperada
3 - AGREGAR el azúcar (2) y dejar trabajar hasta integrar
4 - INCORPORAR la mantequilla (2) hasta obtener punto de liga de la masa
5 - FERMENTAR la masa a doblar tamaño
6 - DIVIDIR la masa en porciones de 500 g
7 - RELLENAR con 250 g. de Queso Crema Philadelphia® y 125 g. de mermelada de calabaza apoyándote de una manga. Cerrar muy bien para evitar que se salga el relleno
8 - FERMENTAR el pan de muerto. A mitad de fermentación colocar las canillas en la superficie
9 - BRILLAR con mantequilla derretida y espolvorear azúcar, dejando que caiga el exceso
10 - HORNEAR a 160 °C. por 50 min. para repostería
