Este 8 marzo se conmemora el Día Internacional de la Mujer y no podíamos dejar pasar la importancia de las mujeres en la gastronomía. En los hogares mexicanos las mujeres fueron impuestas a las tareas domésticas desde la época prehispánica, ellas, tenían tareas específicas para velar por su familia. Una de las más importantes era cocinar y así pasaban el día entre maíz, cacao, frijoles y nopal, utilizando su creatividad para darle a la familia sus creaciones.
La cocina mexicana fue transformándose con el mestizaje, fusionando ingredientes más europeos y así durante el paso de los años el rol de la mujer en la cocina ha ido cambiando, lo que antes era imposición hoy es tomado como profesión con elección propia.
Las dos grandes mexicanas que han triunfado
Celebramos la valentía de esas mujeres que se atreven a hacer algo diferente y que buscan no solo el crecimiento individual, sino colectivo. Ellas están detrás de fabulosas creaciones con sabores de nuestro país y poniendo en alto el nombre de México en el mundo.
Daniela Soto Innes
Con tan solo 30 años de edad, Daniela es reconocida como la Mejor Chef del Mundo. Trabajó en México en los restaurantes Nicos, de Gerardo Vázquez Lugo y Elena Lugo; y en Pujol, de Enrique Olvera quien se convirtió en su mentor y socio. En 2014, abrieron juntos, el restaurante de cocina mexicana Cosme, en Nueva York. Daniela se ha abierto las puertas en la industria desde muy joven gracias a su talento y perseverancia en la cocina. Presta mucha importancia a lograr un buen ambiente y a que la energía sea positiva al cocinar. Hace siempre hincapié en lo indispensable que es, que los líderes escuchen a su equipo, lo cuiden y aprendan cómo tratar a cada persona individualmente para que alcance su máximo potencial y establezca un estilo propio. En sus propias palabras explica: “Para mí, el rol de un chef es un líder, que busca balance y fomenta el trabajo en equipo, alguien que busca inspirar al aprender algo nuevo cada día con su equipo”. Con respecto a Cosme y su equipo dice: “Quiero que los cocineros sientan confianza para hacer preguntas y admitir que cometieron errores, sin tener miedo. ¡Cocineros con confianza hacen que la comida sepa mejor! La cocina de Cosme debe ser como en casa, debe reflejar lo cálido que es México y lo genial que es nuestro equipo”.
Mónica Patiño
Una de las mujeres mexicanas más premiadas en la industria gastronómica y reconocida empresaria. Ha abierto varios restaurantes como La Taberna del León en Valle de Bravo, Delirio y Casa Virginia, ambos en la colonia Roma. Tuvo la visión de formar grandes negocios y en sus propias palabras cuenta, cuál ha sido la clave para lograrlo: “si entiendes cómo funcionan las relaciones humanas en una cocina, entonces podrás detectar de inmediato valores, aptitudes y actitudes positivas y negativas en tu personal”. “Para que un restaurante funcione no basta con la garantía de tu sazón: hay que vigilar cada detalle, desde la preparación de los alimentos y la logística hasta el servicio”. Además de la apuesta por la excelencia culinaria, los restaurantes que Mónica ha abierto a lo largo de toda su carrera tienen un distintivo: la baja rotación de su personal.
Admiramos a todas aquellas mujeres que no han temido y han llevado su talento a la mesa de cientos de comensales, y a todas las que han creído en su capacidad para desarrollar un negocio con toda la actitud y valor para ser triunfadoras.
